Easy Bake healthy Applesauce Muffins

This is a quick and easy ONE BOWL recipe for applesauce muffins. Feel free to experiment with this, I made some this morning and threw in some mini chocolate chips and they turned out super tasty.  

I buy apples by the bushel in Season - local orchards like Lapacek's Orchard and Door Creek are my favorite places.

The apples taste SO MUCH BETTER when from a small farm, not sitting all lonesome on shelves in a big box store.

However- people are BUSY. I know this--so do what you can.

This calls for homemade applesauce, but if you have a jar that's ok too, the sugar content will be much higher but fight your battles where you can, right?  No pressure here. You're still a great Mom, Friend, Sister,  Daughter,  etc...   

Easy bake Applesauce Muffin recipe

To make homemade applesauce, cut 5 pounds of apples into wedges, omitting the core.  Bring the apples and 1 cup of water to a boil. Add in a healthy tablespoon of cinnamon, nutmeg, and a pinch of cloves. Boil until tender- about 20 minutes.  But this mixture into a blender and puree. NOTE- I do not add sugar to my applesauce since it's used in baked goods. IF you are going to eat this plain, add 1/2 cup brown sugar when it's boiling for a nice flavor.

*I find the skins add healthy fiber, and once pureed they disappear. 

To make your own Pumpkin Pie spice mix 4 tsp ground cinnamon, 2 tsp ground ginger, 1 tsp ground cloves, and 1 tsp ground nutmeg. 

I make a bunch and store it in a container.

 2 cups flour
3/4 c brown sugar
2 tsp baking powder
1 tsp salt
1 TBSP pumpkin pie spice
1 TBSP chia seeds
1 beaten egg
1 cup home made applesauce
1/2 cup melted organic butter

Optional: handful of dried cranberries  (These add a touch of sour which I love, but my kids didn't so much.)

Option 2- throw in some mini chocolate chips!

Pre-heat oven to 375 F
Spray mini muffin tin with Coconut oil spray or grease as per usual.

Chia seeds are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fiber, iron, and calcium. Omega-3 fatty acids help raise HDL cholesterol, the "good" cholesterol that protects against heart attack and stroke.

Start putting all the dry ingredients into the bowl and stir to mix. Add wet ingredients in order listed and mix with wooden spoon. It doesn't have to be "beaten"--muffins are softer when the dough isn't overly mixed.

Spoon it into mini muffin pan and bake for around 18 minutes. If need be, insert a toothpick to check on progress at 15 or 16 minutes. You don't want to over cook these. 


On another note, we went to see A Wrinkle In Time last night and it was truly incredible. I loved the imagery, scenery, artistic special effects, and the MESSAGES. It was so empowering! A reminder to BELIEVE in YOURSELF.

I think one has to go into this film with an open mind, without judgement, and TRULY LISTEN. I cried my eyes out. To see the imagery behind the messages was soul touching for me. My girls and Grandma loved it-- it had my 10 year old thinking the whole way home. She talked more about it this morning, and I think grasped the main points. 

Plus- SADE wrote the theme song "Flower of the Universe".

  1. Can this recipe be made in regular size muffins? What would be the cooking time/temperature for a larger version?
    Dwayne Dyer? I don't think so. He says the same thing over and over. It's trite and simplistic.

  2. Yes it can be made with a regular muffin pan. Adjust baking time / watch for browned edges and pulling away of dough from the pan. As for Dr Dyer, I really enjoy his books and lectures. I don’t find him trite or simple at all. To each her own.

  3. Dwane Dyer is far from simplistic, so sorry that Sandra w sees him that way . He has helped millions of people, but maybe just didn’t affect her the same. Each person needs to find their own expert/sage to follow, but I would never criticize one who just doesn’t meet my needs. All of them.... Gandi, Caroline Myss, Florence Scovil Shinn, Tosha Silver, Oprah ......whoever it is, meets someone’s needs.
