Garden Harvest Spicy Tomato Jam Recipe

I love a good spicy jam on my crackers with sharp cheddar cheese. I think it's my favorite snack in the world. Some might call it a chutney instead, but I'm only a tiny bit posh, so jam works for me. LOL

This cooks up quickly and can be stored in the fridge for weeks. I think it makes a nice gift too, for a kind neighbor, or maybe a house warming gift, or for those friends who load you up with garden goodies all summer long. 



3 lbs tomatoes
4 tsp cinnamon
2 tsp red pepper flakes
2 tsp red pepper or cayenne pepper
2 tsp nutmeg
1 tsp all spice
1 tsp thyme
1 cup diced red onions
1 tbsp maple syrup
5 garlic cloves smashed
1 tbsp apple cider vinegar
2 tbsp butter
sea salt to taste

1. Halve the tomatoes and roast them in a 400F oven for about 40 minutes. 
2. Fry the onions in the 2 tbsp butter until caramelized. Add the spices and garlic cloves and fry a few more minutes. 
3. Add the vinegar and syrup to the spice mixture with some salt, then add the tomatoes that are done roasting, including the juice. Stir and break up tomatoes with a wooden spoon.
4. Simmer for 30 minutes are until it reduces to a sticky jam consistency.
5. Let this cool, and pour into sterilized jars. 

***To sterilize your jam jars: Pop them into a 275F oven for 20 minutes. Remove carefully with oven mitts and proceed with filling.
