Ingredients
Lemon Glaze
1/2 cup powdered sugar
3-4 tbsp lemon juice (Juice of 3 lemons)
1 tbs lemon peel
1. Spray cookie sheets with PAM and preheat oven to 375F.
2. Beat butter in mixing bowl for 30 seconds, add sugar, baking powder, and salt. Combine these well.
3. Add eggs and vanilla and beat again until combined.
4. Add flour, beat in until all combined.
5. Stir in the lemon peel and nut mixture making sure the nut pieces are small, if they are too large (like an entire cashew) it will cause the biscotti to crumble apart when you cut it.
6. Divide dough into three portions and shape into a log roll. Flatten slightly into a pleasing shape.
7. Bake at 375F for 20-25 minutes or until golden brown and cracks appear on the top. Let cool for 30 minutes.
8. Use a serrated knife to cut the rolls diagonally into classic biscotti shapes, and arrange on ungreased baking sheet.
9. Bake for 8-10 minutes each side until crisp.
10. Cool on a wire rack and then drizzle with glaze.

*I forgot to add that for the glaze, simply mix togetherthe lemon juice and sugar with a spoon until it comes to a drizzle-y consistency, then pour it over the biscotti.

Oh my, don't they look delicious!! You know, your blog is totally dangerous for me. ReplyDeleteI want some right now!! I like all those flavors. I used to bake a lot, hurt my back, moved into a house with a small kitchen and all the joy just went out of it. Those look soooo good.
