Here it is-my Limoncello (lemon-chello) Cake recipe, fusing some of the best things in life---like lemons & alcohol sugar.
I blame my lust for Limoncello on my BFF Leslie. She whisked me away to Venice last year where we bought several bottles of the stuff and brought it home. Some people know how to hook a girl up, ya know?
When I bake this cake I start to speak as if Tony Soprano is my sugar Daddy.
I know I know--you're thinking "fuhgeddaboutit".... ...... ...
{sigh.}
Ingredients:
1 cup lemon yogurt
zest of one lemon
4 tbs lemon juice
2 eggs
1/3 cup oil
4 tbs Limoncello
1 cup sugar
2 cups flour
1 tsp baking soda
1 1/2 tsp baking powder
pinch salt
Glaze: 3 tbs Limoncello mix with 3/4 cup icing sugar (powdered sugar) until it reaches a proper consistency.
Mix everything except the dry ingredients. I throw it all in my Kitchenaid mixer bowl and then turn it on low with the whisk attachment and mix for 1 minute or so. Then in a separate bowl mix the flour, baking soda, baking powder, and salt until blended in. Then throw that into the original bowl and blend/whisk it for 30 seconds to 1 minute. Don't over mix-it makes the cake tough. (I don't know if that's true, but it's what Martha says in her baking books, so I'm down with it .)
Bake at 350 F or 180 C until it's bouncy and baked throughout-test with a toothpick or knife. I hesitate to say how long because all ovens vary, and the size of your pans make a diff too. I set my timer for 16 min, then checked it every 3 minutes till done.
Make your glaze--mix ingredients and then poke holes in your cakes. Pour glaze over it and let it all soak in. Scrummy.
