This quicky meal/side is so delicious I didn't take more pictures...(because I was busy eating it).
This is all you need:
1 pound carrots peeled and julienned.
You can buy a julienne peeler on Amazon here. (I ♥ mine.)
1 large red onion sliced thinly
1 large bunch cilantro (more or less according to your taste)
1/4 cup lemon juice
1 Tbsp Extra Virgin Olive Oil
3 Tbsp balsamic vinegar
dashes of sea salt
Put carrots and onion in a large bowl. Mix other ingredients together-whisk a bit for good measure. Pour this over the carrot/onion mix, toss to coat. Tear the cilantro leaves and toss on the top. (I love cilantro, so I take the whole bunch, some people just prefer it as a garnish. Your choice.)

This is as close as I can get to my Mother in Law's carrot slaw, she is an AMAZING cook. I wish I had taken notes.
