Nat's faster Recipe adapted from Better Homes & Gardens
(Great for lazy cooks like me.)
Two Layer Pastry crust
2 1/4 cups flour (all purpose)
3/4 tsp salt
2/3 cup shortening
8 to 10 tbsp water
In medium bowl stir together flour,salt, and cut in the shortening with a pastry blender.
Sprinkle 1 tbsp of water at a time until dough is moistened enough to form two balls. Roll each ball out to a 12 inch diameter circle.(I did this on a floured counter top. My rolling pin became sticky, so I floured that up a bit as well.) Lay one circle of pastry in the bottom of the pie plate.
It doesn't have to be perfect. This one is the bottom layer. Put this into the pie pan now and move on to making the apple bit.
Peel, slice, chop, dice.
I pour everything onto the apples at once; the flour,sugar,cinnamon, and nutmeg.

Apple Pie:
6 cups peeled and thinly sliced apples
I like a nice tart apple pie, so I used the cooking apples off the tree in my garden. They are green and super tart. I hear Granny Smith apples make a lovely pie too.
3/4 cup sugar
2 tbsp all purpose flour
1/2 tsp cinnamon
1/8 tsp nutmeg
bit of milk and sugar for dusting the top pastry crust layer
Put apples in a bowl, mix in sugar, flour, & spices. I used a wooden spoon and just turned it over and over till covered. Put this mix into the pie plate. Cover with the second layer of pie crust, make slits in the middle for steam to escape, and brush with milk. Sprinkle sugar dust onto the milk moistened area. Cover the edges with foil. Bake at 375 for 40 minutes. Take the foil off, and bake another 15 minutes.
Place the top pastry on and make some slits.
Brush with milk and sprinkle sugar all over.
It's sugar rain:
@375 degrees F
Bake it for 40 minutes, remove foil, bake another 15minutes. YUM
Serve with vanilla ice cream.
*Added bonus-this makes the house smell divine.

Those are a few of the things I think of.
I made Apple Brown Betty with my leftover apples.........that recipe will be up this week if my internet still works-we've had LOTS of tech issues this week. :/

Yummy....I use Pillsbury crust.....you are a real diehard....good for you...wish I could have a bite of pie and Apple Brown Betty.....

Hahahah "Diehard"-----love it. Die hard Martha Stewart fan I am...I think I'm secretly trying to compete with her, though she doesn't realize this. .. Even if she does omit her taxes from Mr taxman-I still Love her.

DeleteI love apples, but I make apple crisp since I don't use sugar, makes a nice dessert for me and easier than trying to roll out crust.

Oh for sure--apple crisp is much easier, and just as lovely. I think it's similar to Brown Betty, yes? hummm...I'll google it.
DeleteI love baking pies! I haven't made an apple one in nearly a year! Yikes. My fave lately are the Strawberry Hand Pies from Isa Chandra Moskowitz's Vegan Pie In The Sky! It's super good!
