Okay, so when one adds a cup of double cream that been whipped into oblivion, maybe this doesn't count as "healthy".
But really, life is too short to not have scoop upon scoop of this delightfully rich double cream.
(Or as we would say in the US, "heavy cream". Who thought up that name? That just makes me feel fat.)
The Recipe:
2 cups whole wheat flour
1 tbsp honey
1/4 tsp baking powder
cinnamon -a good shake
salt-a small shake
1/4 cup oil
2 eggs
1 1/2 cups milk
1/4 tsp baking soda
Pre-heat waffle iron and spray with Pam or a non stick cooking spray. Whisk together the eggs, milk, honey, oil, cinnamon, and baking soda until combined. Add the flour, baking powder, and salt.
Don't over mix it, just stir together till the big lumpiness is gone. (Is that a word?)
Cook as directed by your waffle iron maker.

For the whipped cream topping:
1 cup of double cream
1/4 cup icing sugar (confectioners)
1 tsp vanilla
Whip it for a few minutes with a chilled whisk/beater machine. It only takes a few minutes, so watch it-if you whip it too long it will start to curd up and form butter.
(I know because I did it. LOL)
