This recipe impressed my "non-salad" eating friends.

Ingredients:
Fresh lettuce
If you don't have the urge to grow your own, buy organic butter lettuce, arugula (known as rocket in England), and a bit of radicchio.
organic goat cheese
French brie
dried cranberries or dried blueberries
celery seed or celery salt (in the seasoning isle)
fresh tomato on the vine
fresh cilantro (coriander)
fresh basil leaves
English cucumber (hot house cuc)
carrots- shaved
red onion
sea salt
pine nuts or walnuts (optional)
extra virgin olive oil
balsamic vinegar
a bit of freshly squeezed lemon
Chop the veg & fruit as you like.
Tear the leaves into bite size bits, along with the cilantro and basil.
Throw everything together into a bowl, drizzle with balsamic vinegar first, then the olive oil. (Otherwise the vinegar won't stick.)
Sprinkle sea salt on top for flavoring.
Squeeze a lemon over the top to preserve the color and flavor if not serving right away.
My grandmother always added the lemon, and it gave it such a zing.
If you want to make the bagel sandwich, just cook up some Canadian bacon and stack the salad on top.
