comfortable, easy, warm, and (for me & my fam) cheap.
My version of dumplings includes a quick skillet fry at the end, to give them a super - thin crunchy coating.
This I learned from my husband's culture, they fry boiled rice to make it crunchy on one side.
This qualifies as a toddler-busy-helping-activity :o)
My kiddo loved the dough part. Squish....
Ingredients:
2 cups Flour
4 tsp Baking Powder
2-4 tbs Shortening
1-2 cups Milk (water will work if you're out of milk)
Combine flour and baking powder.
Cut in shortening until mixture resembles coarse crumbs.
Add the milk until it becomes a moist dough.
Form balls of dough and drop them into boiling water for
10 minutes with Lid on.
Don't remove lid until 10 min have passed.
Check center of one dumpling to be sure it's cooked. Take them out with a slotted spoon.
Heat skillet with Olive Oil and wait for it to get hot.
Put dumplings into hot oil for a few minutes without moving them around much. Once a brown crunchy coating has formed on one side, take them out and rest them on paper towels to soak up any left over oil.
Enjoy! (add salt to taste)
Oh..and keep eyes on any toddlers in the vicinity...or you may end up microwaving some toys:
